There are traditional enchiladas, and then there is the Texas Sweet Heat original enchilada casserole version.  It may not fit the description of the classic enchilada casserole, but man is it tasty and simple to make. 

There are six servings in our original enchilada casserole, and you will want to keep a couple of packets in the pantry for when that feel-good food of cheese, beef, or chicken hits you.

Let's get in the kitchen and make your family some original Texas Sweet Heat enchiladas.

Directions: Cook noodles in 6 cups of boiling water until tender (10 - 15 minutes), drain, and set aside. In a Large Skillet, Brown 1.5 Lbs of ground meat and drain, or add your cooked chicken (Drained Canned Chicken does work). Return pan to medium heat, add the spice packet to the meat, with 1 16 ounce jar of Texas Sweet Salsa (mild or hot). Stir in your cooked noodles and cover with shredded cheese. Serve when cheese is melted. You can also use a large baking dish and brown / melt the cheese 15 to 20 minutes in a 350 Deg F. Oven (cooking time varies by oven). Have some fun and top with crushed tortilla chips, sour cream, or maybe some jalapenos.
